When you think about all the advertisements and magazines and commercials that encourage us to buy and be made-over and to do this and that to improve ourselves, it’s a wonder there’s any individuality left at all! We tend to want this actor’s hairstyle and that model’s figure – or that politician’s power and this athlete’s paycheck. All of these “things” are held up to us as the ideal. And yet, we know, deep inside, that what is REAL is so much more than that. Though we’re inundated by the mega-media machine, we must keep reminding ourselves that what we have to hold onto is who we are, and that is invaluable.

Today’s Recipe: Bacon and Cheese Stuffed Waffles

I got this idea for a bacon and cheese stuffed waffle after I saw my brother use leftover Christmas ham and cheese inside of a waffle… and it was awesome! I used a simple pancake mix and just added water to make the batter. I used cheese that melts nicely; smoked gruyere and mozzarella. These waffles are fabulous on their own or with a dipping sauce of equal parts mustard and mayonnaise. Enjoy!

I love New Years. Something about new beginnings and chances to improve always gives me a feeling of hope and excitement. Plus, I just love champagne. It’s almost as invigorating as the idea of letting go of “the old” things you want to forget or habits you want to change. Like running like an Olympian to catch the kids’ bus every day.
