Today’s Recipe: Mom’s Potato Latkes

Latkes (potato pancakes) are a must-have at Hanukkah, but are really wonderful any time of the year! This is my mother’s recipe, which is honestly the best potato latke I’ve had. I usually end up making a second batch because they disappear so quickly. I’ve tried other recipes and always return to this one. Lovely topped with sour cream or applesauce.

1222: Yesterday’s Winter Solstice was all about rebirth and a new beginning. These things require us to continue the positive thought process. It’s time to separate our Thought Seeds. Keep what you want to grow in the new year and let go of the ones that are no longer good for your garden. Ask for guidance and pay attention to the messages that you receive. By staying true to yourself and sticking to your path it will help your powers of manifestation. Only you know what is best for you and your personal evolution and it is your faith and focus that help you most today. If you feel at loose ends take some time to ground, clear and center. In particular, many of the Sabbats are associated with the magical properties of different plants. Yule, the winter solstice, falls around December 20 – 22 in the northern hemisphere, and near June 20 – 22 if you live below the equator. Let’s take a look at Yule, and seven plants that often correspond with the season.

“At solstice, the woods were bright in a snowy way, the sky pearl gray above the stately maples and gnarled burr oaks. An Alaskan marooned in the urban Midwest, it took me years to find this nearby patch of relatively undisturbed land where I can sense the power of wildness. Now I go there often, watching the seasons unfold their changeful unchanging patterns in the increasingly familiar forest.

I especially like to walk among the sleeping trees in the half-lit silence of winter dawns. The trail I follow winds and twists, new patches of mixed woodland appearing at every turn. That morning, I reached a point where the path turns sharply left to follow a small ravine. In spring, ephemeral ponds—lively with salamanders, loud with frogs—form in the creases of the forest there. But in frozen winter, I expected nothing beyond silence and wind.

So I did not see them at first, three deer beside three empty larches. When I made them out—gray-dun hides against a gray-dun world—they were motionless, white tails aloft like flags of distress. I stopped in my tracks, thinking how lucky I was to meet the animal my Celtic forebears called the spirit of wildness on that auspicious day.”

1221: Happy Winter Solstice! Today marks the beginning of winter, the return of the sun and longer days. On this day of celebration the Universe is asking us to hold love in our hearts and to trust in both your inner guidance system and the universal energies.Your power of positive self talk will also come into play today. Remember that any statement you make can influence the outcome of any given situation, so take care to stay away from the negative ones. As we work towards transforming our lives it’s important to make statements in the present tense (I AM, I HAVE). The Universe and its helpers want us to have the best and be our best. They are always working behind the scenes to help us manifest our dreams and goals. Remember that when we do our part they can do theirs. 1220: Today is a gentle reminder to have faith in ourselves and in the Universe. Strengthen your belief that miracles happen, that problems are only temporary setbacks and there are solutions to every problem although some may require more work to find than others. Perspective is the key and we are being asked to view things in an optimistic and positive manner. Remember even when things don’t work out or they don’t happen quite as we planned we can always find the ONE good thing that came of it and use it as a starting point to move forward. Don’t allow frustration to cloud your vision and even if we don’t see the results of our prayers and actions right now our Divine friends are working behind the scene to make things happen on our behalf. 1219: Spirituality and our own innate healing abilities create the groundwork for today’s message. The Universe is gently reminding us that we are qualified to help and heal both ourselves and others. However, this begins with you and you must have the motivation and willingness to start the process and to keep it going. The important thing about self-healing is to keep in mind that we are always a work in progress and that healing the self is never a one time thing. If you are working with others the key lies in listening and remembering that we are not here to FIX them. The truth is that if someone has a problem they are not usually looking for you to fix it they simply need to talk it out. Today’s Message: Achieving Balance

1218: This time of year can make it difficult to maintain the balance between giving and receiving. The key is in your ability to not overextend yourself in either direction. By acknowledging our boundaries we help to create and maintain this necessary balance. By staying open and positive about both areas as well we will find it easier to embody the attitude of gratitude and acknowledge the gifts and blessings that flow in and out of our lives. Remember that the Universe is meeting our needs and that we are safe and cared for.
