EarthSky News:  Summer Triangle and smallest constellations

The Summer Triangle is not a constellation but a large asterism consisting of three bright stars in three separate constellations. These stars are Vega, Deneb and Altair. If you can find the Summer Triangle, you can use it to locate three of the sky’s smallest constellations: Vulpecula the Fox, Delphinus the Dolphin and Sagitta the Arrow. All three would be impossible to see from the city, but they’re lots of fun to see in a dark sky.

Chicken breasts, onions, and carrots stew in vinegar and wine for a tangy South American escabeche meal. This is delicious served over rice or quinoa. This dish can be served immediately but it is even better if served at room temperature after the flavors have had some time to meld.

Today’s Recipe: Purple Sweet Potato Pie

I’m sure many of you have had sweet potato pie. This pie is very similar but uses purple sweet potatoes. Baking the sweet potatoes in the oven (in lieu of boiling them) gives this a beautiful creamy consistency and not at all watered down. Baking them also retains their beautiful purple colour. Purple sweet potatoes can be found in grocery stores labeled as Okinawan, Hawaiian, or purple sweet potatoes. They are packed full of potassium, B6, vitamin C, and fiber.
